Oyster Mushroom Stir-Fry – a quick and easy meal in a matter of minutes.
I’m not a huge fan of fusion food. I love to try out authentic recipes from all over the world, but I don’t like to mix them together. In spite of that, this time I combined Chinese and Mediterranean cuisine in a way that I believe will not be insulting for any of them. I used white wine in a traditional Asian stir-fry and I served it over mashed potatoes instead of traditional rice or noodles.
It is worth to mention that oyster mushrooms have meaty texture that can replace meat in vegetarian/vegan dishes like this one.
I intended to use oyster sauce for this recipe, but I didn’t have it at home so I used Kecap Manis instead, which is a kind of Indonesian sweet dark soy sauce. I added 1-2 drops of fish sauce to it, which is totally optional for you.
If you have some fresh ginger at hand you can add it to the recipe together with shallots and garlic. A little bit of powdered ginger added by the end of cooking will work just as well.
Nowadays, when oyster mushrooms can be found in almost every supermarket the year around, it is super simple and quick to whip up Oyster Mushroom Stir-Fry dish any day of the week.

- 250 g 1/2 lb oyster mushrooms
- 4 shallots or 2 small onions
- 3 large garlic cloves
- 2 Tbsp vegetable oil
- 1/4 cup white wine optional
- 1/4 cup water
- 1/4 tsp corn starch
- 2 tsp Kecap Manis or oyster sauce or soy sauce
- black pepper
- 1 tsp sesame oil
- a dash of powdered ginger
- 1-2 drops fish sauce optional
- chopped parsley for garnish

Clean the mushrooms, trim their tough stems and tear the mushrooms in stripes.

Cut shallots and garlic cloves into thin strips. Fry in oil heated in a wok or a pan for 1-2 minutes. Add oyster mushrooms and stir-fry for another 2 minutes.

Add white wine and wait a few seconds until alcohol evaporates. Combine cornstarch with water and add to the wok together with remaining ingredients. Cook until mushrooms are soft and sauce is thick and reduced. If liquid evaporates before mushrooms are cooked, you can add a little bit more water.
