Tortilla Chips Casserole

Ingredients
  • 1 large onion
  • 1 lb ground beef
  • 1-2 cloves garlic minced
  • 1 1/2 cup Mexican vegetables mix canned*
  • 2 cups burrito cooking sauce or chunky salsa
  • 1/2 cup milk or sour cream
  • a pinch of oregano cumin and paprika
  • 2 cups grated Cheddar cheese and/or Monterey Jack cheese
  • 3 1/2 cups crushed tortilla chips about 200 g; 7 oz
  • black olives for garnish
Instructions
  1. In a large pan, saute onion in olive oil. Add ground beef and garlic and cook until cooked through, breaking it into small pieces while cooking.
  2. Stir in mixed vegetables, burrito sauce and milk. Season with oregano, cumin and paprika. Cook for 2-3 minutes.
  3. Stir in half of the cheese and crushed tortilla chips.
  4. Transfer the mixture into an oiled 9x9 inch (22x12.5 cm; 8 cups volume) baking dish. Top with remaining cheese and garnish with sliced black olives.
  5. Bake in preheated 350 F (175 C) oven for about 30 minutes or until heated through and bubbly.
Recipe Notes

* If using frozen vegetables, cook a little longer, until vegetables are soft.
