Baked Calamari with Potatoes
Servings: 6
Ingredients
  • 1 kg calamari whole, 2 lb
  • 1 kg potatoes peeled and cut in thin round slices, 2 lb
  • 2-3 in large onions cut round slices
  • 2 cloves garlic chopped
  • 1 Tbsp . fresh parsley chopped
  • 100 ml olive oil 1 /2 cup
  • 1/2 cup white wine
  • salt black pepper
Instructions
  1. Preheat the oven to 165 C (330 F).
  2. Season potatoes with garlic, parsley, salt and pepper. Arrange 2/3 potatoes in a greased casserole dish. Cover with whole calamari. Top with remaining potato slices and onion. Pour olive oil and wine over it.
  3. Cover and bake over a low heat for 1 hour, until the potatoes are tender. Serve hot from the oven.
