STRUFFOLI (Honey Balls) - Neapolitan deep fried balls of dough

Ingredients
  • 2 cups flour, all-purpose
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 3 eggs
  • 1 Tablespoon butter, softened
  • 1 teaspoon rum
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon lemon zest
  • 1 cup liquid honey
  • candy sprinkles
Instructions
  1. Mix the flour with the baking powder.
  2. Whisk together sugar, vanilla, eggs and butter. Add flour mixture and make a soft dough. Roll out the dough into small quantities. Cut dough into 1/2-inch strips and cut 1/2-inch pieces from the strips. Roll each piece into a small ball.
  3. Put vegetable oil into a large pot and bring to 175 C (350 F). Fry the dough in four or five batches until it is golden all over. Place onto a baking pan lined with paper towels to absorb excess oil.
  4. Warm the honey in a saucepan. Drizzle the struffolli with the honey, sprinkle with candy sprinkles.
