Ingredients
  • 3 cups shredded red cabbage
  • 1 cup carrot, grated or julienned
  • 1/2 thinly sliced onion
  • 1/2 thinly sliced purple onion
  • 1 sliced red pepper
  • 1 sliced green pepper
  • 1 sliced yellow pepper
  • 1/4 cup chopped cilantro
  • 1/4 cup lime juice
  • 2 Tablespoons vinegar
  • 1/4 cup honey, optional
  • 1 Tablespoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1/3 cup olive oil
Instructions
  1. Chop vegetables to bite size.
  2. In a large bowl, combine cabbage, carrots, onions, peppers and cilantro. Toss to combine.
  3. Whisk together lime juice, vinegar, honey, cumin, salt, and pepper in a small bowl. Slowly whisk in the olive oil.
  4. Pour the dressing over the rainbow salad and toss gently until coated. Season with salt and pepper to taste.
