Instructions
Chop vegetables to bite size.
In a large bowl, combine cabbage, carrots, onions, peppers and cilantro. Toss to combine.
Whisk together lime juice, vinegar, honey, cumin, salt, and pepper in a small bowl. Slowly whisk in the olive oil.
Pour the dressing over the rainbow salad and toss gently until coated. Season with salt and pepper to taste.
