Easy Peach Turnovers
Easy Peach Turnovers - taste like croissants filled with peach pie filling!

Ingredients
  • 1 sheet puff pastry, defrosted (1/2 of the 17.3 ounces package)
  • 2 small peaches, (about 1 1/2 cup diced)
  • 1/4 tsp grated lemon zest
  • 1 tsp freshly squeezed lemon juice
  • 1/8 tsp ground cinnamon
  • 1/8 tsp almond extract (optional)
  • 2 Tbsp brown sugar
  • 1/2 Tbsp cornstarch
  • 1 egg beaten with 1 Tablespoon milk
Instructions
  1. Dice fresh (or canned) peaches (no need to peel them). Toss them with the lemon zest and juice, cinnamon, almond extract, brown sugar and cornstarch.

  2. On a floured surface, roll out puff pastry to a square. Cut it into 8 smaller squares. Brush the edges of each square with the egg wash. Place about a little bit of peach mixture on each square. Fold one corner of the dough over to form a triangle. Press the edges with a fork to seal them.

  3. Place triangles on a baking sheet lined with parchment paper. Brush turnover tops with egg wash and make 3 small slits to allow the steam to vent. Bake in 400 F preheated oven for 20-25 minutes or until golden.
  4. Serve Peach Turnovers sprinkled with powdered sugar.
