Banana Nut Muffins – healthy breakfast muffins, full of walnuts, banana, oats and whole wheat flour.

Ingredients
  • 1 1/2 cups whole wheat flour
  • 1 cup rolled oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 large egg
  • 1 cup applesauce, unsweetened
  • 1/2 cup milk, low fat or non-fat
  • 1/4 cup sunflower or vegetable oil
  • 1/2 cup banana puree (about 2 bananas mashed with a fork)
  • 1/2 cup brown sugar, firmly packed
  • 2/3 cup walnuts, toasted and chopped
Instructions
  1. Combine whole wheat flour, rolled oats, baking powder, baking soda and cinnamon.
  2. In another bowl, whisk together egg, applesauce, milk, oil, banana puree and brown sugar.
  3. Add the flour mixture, stirring until just moistened (do not over-mix). Add chopped walnuts and stir.
  4. Divide the batter between 12 muffin cups. (Optional: sprinkle muffins tops with some chopped walnuts.)
  5. Bake at 400 F (200 C) for about 20 minutes or until a toothpick inserted in the middle of one of the muffins comes out clean.
