GARNISH : dessicated coconut, melted chocolate

Process dried apricots until finely chopped. Add orange juice and blend to a thick paste.

Add remaining ingredients and process until combined.

Take a small amount of apricot mixture and roll into walnut-size balls.

OPTIONAL: Roll balls in dessicated coconut or coat them in melted chocolate.
