In a large bowl combine oatmeal, all-purpose flour, baking powder, baking soda, cinnamon, pumpkin spice and salt. In another bowl, mix egg whites with pumpkin puree, applesauce, mashed banana, brown sugar and almond milk. Add wet ingredients to dry ingredients and mix until combined (do not overmix). If you try to stir out all the lumps, your muffins will have tunnels and a tough texture. Fold in chocolate chips with a spoon or spatula.
