Ingredients
  • 1 cup oatmeal
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 2 tsp pumpkin spice
  • 1/4 tsp salt
  • 2 egg whites, slightly beaten
  • 1 cup pumpkin puree
  • 1/3 cup applesauce, unsweetened
  • 1/2 ripe banana, mashed
  • 1/3 cup dark brown sugar
  • 2/3 cup almond milk, unsweetened
  • 1/2 cup + 2 Tbsp chocolate chips
  • Extra oatmeal for sprinkling on muffins
Instructions
  1. Line 12 muffin cups with paper cups. I used 2.5x1 inches (6x3 cm) size muffin cups (1/3 cup + 4 tsp or 100 ml volume).
  2. In a large bowl combine oatmeal, all-purpose flour, baking powder, baking soda, cinnamon, pumpkin spice and salt. In another bowl, mix egg whites with pumpkin puree, applesauce, mashed banana, brown sugar and almond milk. Add wet ingredients to dry ingredients and mix until combined (do not overmix). If you try to stir out all the lumps, your muffins will have tunnels and a tough texture. Fold in chocolate chips with a spoon or spatula.
  3. Fill the cupcake liners with the batter evenly. Sprinkle with a little bit of oatmeal over each muffin. Bake in 350 F (175 C) preheated oven for 23-28 minutes or until a skewer/knife inserted into center of muffins comes out clean.
