Chia Seed Parfait - excellent breakfast treat or a light afternoon dessert.

firm yogurt like Greek Yogurt

prepared sugar-free pudding

chopped fruit (I used peach and grapes)

bran flakes, crushed

sweetener to taste
(agave syrup or honey)

Put chia seeds and yogurt in a small bowl. Soak chia seeds in yogurt for about 15 minutes.

Add prepared pudding and mix all together. Sweeten to taste, if necessary.

In a serving bowl or glass, layer chopped fruit with chia-yogurt-pudding mix. Sprinkle the top with crushed bran flakes for added crunch.
