Okra Gumbo (in Instant Pot) - a new twist on a traditional recipe; both vegetarian/vegan and chicken/sausage/seafood versions.

  • ROUX:
  • 1/2 cup all-purpose flour
  • 1/2 cup vegetable oil
  • GUMBO:
  • 1 onion
  • 2 celery ribs, chopped
  • 1 green bell pepper, cubed
  • 2 cups okra
  • 4-5 garlic cloves, sliced
  • 4 cups vegetable stock
  • 2 bay leaves
  • 1 tsp smoked paprika
  • 1 tsp dry thyme
  • 1-2 tsp Cajun seasoning
  • 1 Tbsp Worcestershire sauce
  • salt and black pepper, to taste
  • OPTIONAL ingredient: 1-2 Tbsp Oyster sauce
  1. ROUX: Turn on Instant Pot, Saute setting, High, lid opened. Put flour in it and stir every 30 seconds or so. When it starts changing color, stir non-stop until it becomes dark as peanut butter. Add oil and stir some more.
  2. Add onion, celery and bell pepper. Saute for about 5 minutes, stirring occasionally.

  3. Add all remaining ingredients* and stir to combine. Cover the Instant Pot with a lid, set seal to "Sealing" and cook for 10 minutes on Manual setting. Release pressure quickly by turning valve to "Venting".
  4. Serve gumbo over cooked long grain rice.
Recipe Notes

*At this point you can add other ingredients of your choice: 1 lb of cubed chicken meat and 1/2 pound of Andouille sausage for Cajun Chicken and Sausage Gumbo or 1 lb shrimp for Seafood Gumbo or more vegetables for Vegetable Vegan Gumbo etc.
