Potatoes in Tomato Sauce Recipe

Ingredients
  • 2 lb potatoes peeled and cubed
  • 1 onion chopped
  • 5 cloves garlic
  • 2 Tbsp extra virgin olive oil
  • 1/2 tsp dry oregano or basil or parsley
  • salt pepper
  • 1 cup tomato sauce
Instructions
  1. Sauté onions in 2 tablespoons of olive oil over a medium heat until soft.

  2. Add garlic, potatoes, tomato sauce and enough water to cover the potatoes. Season with oregano, salt and pepper.
  3. Cook over low heat for about 1/2 hour or until potatoes are cooked through, stirring from time to time. Serve Potatoes in Tomato Sauce immediately. Store leftovers in the refrigerator for the next day. This dish can be reheated in the microwave or the oven.
