Grape Salad

  • 2 cups white grapes
  • 2 cups red grapes
  • 1/4 cup dry cranberries
  • 2 Tbsp whipped cream
  • 2 Tbsp creamy ricotta cheese
  • 1/2 tsp vanilla extract
  • 1 Tbsp maple syrup
  • Tbsp GARNISH: 1 pecans or walnuts chopped, 1 Tbsp dark brown sugar, candied cherry and kumkwat (optional), 1/2 Tbsp maple syrup (optional)
  1. Wash and stem white and red grapes.
  2. In a bowl, mix whipped cream, ricotta cheese, vanilla extract and maple syrup. Add grapes and cranberries and toss to coat. Cover and refrigerate until serving.
  3. Just before serving, sprinkle with brown sugar and pecans and drizzle with some maple syrup. Garnish with candied fruit (optional).
