Cucumber Dill Greek Salad

  • 1 lb cucumbers 2 large
  • 1 Tablespoon Greek yogurt
  • 1 Tablespoon sour cream
  • 1 Tablespoon lemon juice
  • 1 clove garlic minced
  • 1 teaspoon fresh dill chopped
  • salt and ground black pepper to taste
  1. Peel and finely slice the cucumbers. You can use a food processor with appropriate attachment, a mandoline slicer, a vegetable peeler or a sharp knife to do that.
  2. In a salad bowl, mix Greek yogurt with sour cream, lemon juice, minced garlic and dill. Season with salt and black pepper to taste. Add cucumber and toss with yogurt mixture until well combined. Adjust seasoning if necessary.
  3. Refrigerate for at least 1 hour before serving.
