Homemade Graham Crackers
Ingredients
  • 1 cup + 2 Tbsp all-purpose flour 150 g
  • 1 1/2 cups graham flour 200 g, whole wheat flour
  • 1 cup dark brown sugar loosely packed, 200 g
  • 1 tsp baking powder
  • 1/4 tsp cinnamon
  • a pinch of salt
  • 7 Tbsp unsalted butter cut into 1-inch cubes and frozen, 3 1/2 oz; 3/4 stick + 1 Tbsp; 100 g
  • 1/3 cup mild-flavored honey 4 oz; 112 g
  • 5 Tbsp whole milk 1/3 cup; 75 ml
  • 2 tsp vanilla extract
Instructions
  1. Put both flours in the bowl of your food processor. Add sugar, baking powder, cinnamon and salt. Mix to blend. Add the butter and pulse until the mixture resembles coarse meal.
  2. In another bowl, combine honey with milk and vanilla extract. Whisk until honey is dissolved. Add to the flour mixture and pulse a few times until the dough comes together.
  3. Wrap in cling film and chill in the refrigerator for about 2 hours (or even overnight).
  4. Roll the dough about 1/8 inch thick. Cut 2×3″ (6×8 cm) crackers. Place them on a parchment-lined baking tray. Prick the dough with a fork.
  5. Bake in preheated 350 F (175 C) oven for about 10 minutes or until slightly browned.
