  • 1 ounces package mixed dried beans 12
  • 1 large onion chopped
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 8 cups water
  • 2 bouillon cubes
  • 2 cloves garlic minced
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon pepper
  • salt to taste
  1. Put the beans in a large pot with water enough to cover the beans by a good 3 inches. Let soak overnight. Drain beans.
  2. In a large pot, heat the oil and saute the onions. Add the carrots and celery, saute another 2-3 minutes.
  3. Add the remaining ingredients and bring to a boil. Simmer for 1 1-1/2 to 2 hours or until beans are tender. Season with salt.
