Basic Sofrito Recipe
Basic Sofrito Recipe - learn how easy it is to prepare a large quantity of sofrito (soffritto) for freezing.

Servings: 4 cups sofrito

  • 2 cups onion, diced
  • 1 cup celery or celeriac, diced
  • 1 cup carrots, diced
  • ADDITIONS (optional): green and red bell peppers, garlic, leek, fenel, herbs and spices
  1. Combine all vegetables in a bowl. (If not diced already, mix them in your food processor until chopped evenly).
  2. Place in a 1 liter (1 quart) ziploc bag. Squeeze out the air, pat the bag flat and store in your freezer.
  3. When ready to cook, take out from freezer (no need to thaw) and cook in olive oil and/or butter.
