  • 250 g 1/2 lb oyster mushrooms
  • 4 shallots or 2 small onions
  • 3 large garlic cloves
  • 2 Tbsp vegetable oil
  • 1/4 cup white wine optional
  • 1/4 cup water
  • 1/4 tsp corn starch
  • 2 tsp Kecap Manis or oyster sauce or soy sauce
  • black pepper
  • 1 tsp sesame oil
  • a dash of powdered ginger
  • 1-2 drops fish sauce optional
  • chopped parsley for garnish
  1. Clean the mushrooms, trim their tough stems and tear the mushrooms in stripes.

  2. Cut shallots and garlic cloves into thin strips. Fry in oil heated in a wok or a pan for 1-2 minutes. Add oyster mushrooms and stir-fry for another 2 minutes.
  3. Add white wine and wait a few seconds until alcohol evaporates. Combine cornstarch with water and add to the wok together with remaining ingredients. Cook until mushrooms are soft and sauce is thick and reduced. If liquid evaporates before mushrooms are cooked, you can add a little bit more water.
