Spicy Purple Sweet Potato Fries – crispy oven baked fries, full of antioxidans and actually good for you!

Cajun seasoning
(dry oregano, dry thyme, garlic powder, cayenne pepper, smoked paprika, black pepper)

Cut sweet potatoes (peeled or unpeeled) in wedges. Place in a large bowl.

In a small bowl, combine salt, Cajun seasoning and potato starch. Sprinkle over sweet potatoes and toss to coat.

Drizzle with olive oil and mix well.

Place on a baking tray lined with baking paper. Bake in 200 C (400 F) oven for 15-20 minutes.

Take out of the oven. Flip wedges with two forks or kitchen tongs. Put back in the oven and bake for another 5-10 minutes or until soft on the inside.
