Incredibly Easy Thai Peanut Sauce Noodles - one-pot simple pasta with 1-minute, no-cook peanut sauce!

  • 2 cups broccoli florets
  • 8 oz 225 g spaghetti, udon or other noodles
  • SAUCE:
  • 3 Tbsp hot water (you ca use pasta water)
  • 3 Tbsp peanut butter
  • 2 Tbsp soy sauce
  • 3/4 Tbsp lime juice
  • 1 Tbsp sesame oil
  • 1-2 garlic cloves minced
  • red chili flakes or 1 Tbsp Sriracha sauce (optional)
  • 2 Tbsp cilantro or pasley or green onion chopped
  • 1 Tbsp honey
  • 3/4 Tbsp minced ginger
  • 1 Tbsp rice vinegar (optional)
  1. Cook broccoli florets in plenty of salty water. Take out with slotted spoon.
  2. Put spaghetti or noodles in the same pot with water and cook according to package directions.
  3. Reserve some water from cooking and drain the pasta.
  4. In the meantime, mix all ingredients for the sauce, adding hot pasta water, little by little, until you get desired consistency.
  5. Combine drained pasta with broccoli and sauce. Adjust seasoning to your liking. Can be eaten hot or cold.
