Sweet Potato Waffles
Sweet Potato Waffles - the most tasty way of incorporating healthy veggies into your diet.

  • 1 cup pureed sweet potatoes (from about 1 large sweet potato)
  • 1/2 cup milk
  • 1 egg, separated
  • 2 Tbsp brown sugar
  • 1/2 tsp vanilla extract
  • 2 Tbsp oil (or melted butter)
  • 1 cup all-purpose flour
  • 1/2 tsp salt
  • 1/2 tsp pumpkin spice (optional)
  1. Beat egg white until soft peaks form. Set aside.
  2. In another bowl, mix pureed sweet potatoes with milk, egg yolk, brown sugar, vanilla extract and oil.
  3. Combine flour with salt and pumpkin spice (if using). Add to sweet potato mixture and whisk to blend. Gently fold in beaten egg white.
  4. Add batter to your waffle iron and cook according to manufacturer's direction.
