  • 2 cups (9 oz; 250 g) dried apricots
  • 1/3 cup orange juice
  • 1/2 cup almond meal or finely chopped almonds
  • 2 tsp agave nectar or honey
  • 1/4 cup protein powder
  • 1 Tbsp coconut oil
  • 1/4 tsp grated orange zest
  • a pinch of cinnamon
  • 1/2 tsp vanilla extract
  • GARNISH : dessicated coconut, melted chocolate (optional)
  1. Process dried apricots until finely chopped. Add orange juice and blend to a thick paste.
  2. Add remaining ingredients and process until combined.
  3. Take a small amount of apricot mixture and roll into walnut-size balls.
  4. OPTIONAL: Roll balls in dessicated coconut or coat them in melted chocolate.
