Quinoa Fried Rice - if you like regular fried rice, you will like this low-carb, recipe, too.

  • 1/2 Tbsp oil
  • 1 Tbsp butter
  • 1 egg
  • 2 green onions, chopped
  • 1 1/2 cup frozen vegetables
  • 2 cups cooked quinoa*
  • 1 1/2 Tbsp soy sauce
  • 1 1/2 tsp oyster sauce
  • 1/4 teaspoon garlic powder
  • 1/2 tsp sugar
  • 1/4 tsp ginger optional
  • salt pepper
  • 1/2 tsp sesame oil
  1. In a wok or a large pan, heat oil and butter. Fry the egg (scrambled) and take out of the pan.
  2. Add chopped onions and frozen vegetables and stir-fry until vegetables are tender.
  3. Add cooked quinoa, soy sauce, oyster sauce, garlic powder, sugar and ginger. Continue stirring for about 1-2 minutes. Season with salt and pepper, to taste.
  4. Remove from heat and add sesame oil. Serve immediately.
