Quinoa Cucumber Tomato Mozzarella Salad - great for family dinner, picnic, barbeque or a party.

cooked quinoa about 1/4 cup dry quinoa before cooking

fresh cucumber cubed

tomatoes cubed
(or cherry tomatoes)

mozzarella balls halved

DRESSING:

olive oil

red wine vinegar

dry dill or 1/2 Tbsp fresh dill

salt and black pepper to taste

Put olive oil, red wine vinegar, dill, salt and black pepper in a large serving salad bowl. Mix with a fork.

Add cooked and cooled quinoa, cubed cucumber, tomatoes and halved mozzarella balls. Toss to combine and serve immediately.
*If you want to make your salad ahead, put cubed cucumbers in a colander and toss with a large pinch of salt. Let the cucumbers sit for 20 minutes to release liquid, then gently pat dry with a paper towel.
