Quinoa Cucumber Tomato Mozzarella Salad - great for family dinner, picnic, barbeque or a party.

  • 1 cup cooked quinoa about 1/4 cup dry quinoa before cooking
  • 1 cup fresh cucumber cubed
  • 1/2 cup tomatoes cubed (or cherry tomatoes)
  • 1/2 cup mozzarella balls halved
  • 2 Tbsp olive oil
  • 2 Tbsp red wine vinegar
  • 1/2 tsp dry dill or 1/2 Tbsp fresh dill
  • salt and black pepper to taste
  1. Put olive oil, red wine vinegar, dill, salt and black pepper in a large serving salad bowl. Mix with a fork.
  2. Add cooked and cooled quinoa, cubed cucumber, tomatoes and halved mozzarella balls. Toss to combine and serve immediately.
Recipe Notes

*If you want to make your salad ahead, put cubed cucumbers in a colander and toss with a large pinch of salt. Let the cucumbers sit for 20 minutes to release liquid, then gently pat dry with a paper towel.
