Vegan Fruit Salad - deliciously creamy dessert, low in calories.
agave nectar or honey or other sweetener
fresh fruit cubed
garnish : poppy seeds, dessicated coconut,
dry fruit (currants, goji berries), fresh mint, optional
Soak cashews in water for a few hours or over night. Next day, drain cashews, put them in blender together with about 1/3 - 1/2 cup water (enough to cover them). Add agave nectar and vanilla extract and blend until smooth.
Place cubed fruit in a bowl, pour cashew cream over it and gently mix with a spoon.
Transfer into serving glasses. Garnish with poppy seeds, dessicated coconut, dry fruit and fresh mint leaves.
