Vegan Fruit Salad
Vegan Fruit Salad - deliciously creamy dessert, low in calories.

  • 1/2 cup cashews
  • 1-2 tsp agave nectar or honey or other sweetener
  • 1/4 tsp vanilla extract
  • 3 cups fresh fruit cubed
  • leaves garnish : poppy seeds, dessicated coconut, dry fruit (currants, goji berries), fresh mint, optional
  1. Soak cashews in water for a few hours or over night. Next day, drain cashews, put them in blender together with about 1/3 - 1/2 cup water (enough to cover them). Add agave nectar and vanilla extract and blend until smooth.
  2. Place cubed fruit in a bowl, pour cashew cream over it and gently mix with a spoon.
  3. Transfer into serving glasses. Garnish with poppy seeds, dessicated coconut, dry fruit and fresh mint leaves.
