Cranberry Pistachio Orange Cookies - easy icebox cookies rolled in orange sugar will dazzle your guests.

  • 1 cup sugar or 1/2 cup agave nectar
  • 3/4 cup butter room temperature
  • 1 egg
  • 2 cups all purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup dried cranberries, chopped
  • 1/2 cup pistachio nuts, chopped
  • 1 Tbsp orange peel, freshly grated
  • 1/3 cup sugar
  • 1 tsp orange peel, freshly grated
  • 1 Tbsp cocoa powder (optional)
  1. COOKIES: In a large bowl, mix 1 cup sugar with butter and egg until creamy.
  2. Add flour, baking powder and baking soda and mix until combined.
  3. Add cranberries, pistachio nuts, 1 Tbsp orange peel and mix. (Optional: add cocoa powder to half of the cookie dough.)
  4. ORANGE SUGAR: In a small bowl, combine 1/3 cup sugar with 1 tsp freshly grated orange peel.
  5. Shape cookie dough into 1-inch (2 1/2 cm) balls. Roll balls in orange sugar and put them 2 inches (5 cm) apart onto cookie sheets lined with baking paper. Flatten each cookie with bottom of glass.
  6. Bake in 350 F (175 C) preheated oven for about 7 minutes or until edges become pale golden. Be careful not to overbake. Cool for 1 minute before removing from cookie sheets.
