Chia Seed Parfait
Chia Seed Parfait - excellent breakfast treat or a light afternoon dessert.

  • 1 Tbsp chia seeds
  • 1/4 cup firm yogurt like Greek Yogurt
  • 1/4 cup prepared sugar-free pudding
  • 1 cup chopped fruit (I used peach and grapes)
  • 1 Tbsp bran flakes, crushed
  • sweetener to taste (agave syrup or honey)
  1. Put chia seeds and yogurt in a small bowl. Soak chia seeds in yogurt for about 15 minutes.
  2. Add prepared pudding and mix all together. Sweeten to taste, if necessary.
  3. In a serving bowl or glass, layer chopped fruit with chia-yogurt-pudding mix. Sprinkle the top with crushed bran flakes for added crunch.
