Vegan Side Dish - great for any season.
vegan side dish
(sunflower, canola or olive oil)
medium carrots, sliced in rounds
a pinch of dry thyme
Saute onion and leek in oil. Add carrots and continue frying for about 5 minutes. Add a little bit of water if the mixture becomes too dry.
Add garlic and potatoes cut in thin round slices. Cook until soft.
Add tomato puree, thyme and season with salt and pepper. Continue cooking until sauce thickens a little bit.
Transfer to an oiled baking dish, cover with aluminum foil and bake in 350 F (175 C) oven for about 20 minutes.
