Ingredients
  • 2 large eggs room temperature
  • 1/4 cup fructose sugar or 1/16 teaspoon stevia powder or a few drops of stevia extract
  • 2 cups low fat milk
  • 1 tsp vanilla extract
  • 1/8 tsp freshly grated nutmeg
  • 1 oz (30 g) brandy or bourbon optional
Instructions
  1. In a saucepan, whisk together eggs and fructose sugar until all of the sugar is dissolved. Whisk in milk, vanilla and nutmeg.
  2. Turn heat to medium. Bring mixture just to a simmer (160F). Do NOT allow the eggnog to boil, or it will curdle. Hold at that temperature for 1 minute, then remove from heat. Strain and chill for at least 4 hours.
  3. When ready to serve, pour into glasses, add brandy and sprinkle with additional nutmeg.
