Moo Goo Gai Pan

Ingredients
  • 1 lb chicken breast cut into thin stripes
  • MARINADE:
  • 1 egg white
  • 1/2 tsp salt
  • 1/8 tsp ground pepper
  • 2 tsp cornstarch
  • VEGETABLES:
  • 2 cups button mushrooms or oyster mushrooms or shiitake, sliced
  • 1/2 cup celery stalks, sliced
  • 1/3 cup each red yellow and green bell peppers, cut into large chunks
  • 3 slices ginger
  • 2 garlic cloves, sliced
  • 1/4 cup spring onions, sliced
  • 1/4 cup carrots, thinly sliced
  • 1/2 tsp sugar
  • 3 + 1 Tbsp vegetable oil
  • 1/4 cup water or Chicken stock
  • SAUCE:
  • 1/4 cup Shaoxing wine or Sake
  • 1 Tbsp soy sauce
  • 2 Tbsp oyster sauce
  • 1/4 cup water
  • 1 Tbsp cornstarch
  • 1 tsp sesame oil
Instructions
  1. Mix egg white with salt, pepper and cornstarch. Coat sliced meat with this mixture.
  2. Put 3 tablespoons oil into wok or large frying pan. Add chicken and fry until almost done. Remove from pan.
  3. Add remaining oil and sliced vegetables. Fry until soft to your liking. Return meat to wok / pan.

  4. SAUCE: Mix Shaoxing wine with soy sauce, oyster sauce, water, cornstarch and sesame oil. Pour sauce over the vegetable and meat mixture and cook, stirring from time to time, for at least one minute or until sauce thickens.

  5. Serve Moo Goo Gai Pan over cooked rice.
