  • 1 large celery root diced celeriac
  • 1 Tbsp butter
  • 3/4 cup chicken broth or water
  • 3/4 cup heavy cream
  • a pinch of dry garlic
  • a pinch of thyme
  • salt and pepper to taste
  • chopped chives for garnish
  1. Saute celeriac in butter for 2-3 minutes. Add remaining ingredients, cover and cook for about 15-20 minutes, stirring from time to time. If liquid evaporates too quickly, add a few tablespoons of water.
  2. Mash with a potato masher or blend using immersion or regular blender. If you like very thick puree, return to the pot and heat, stirring, for 1-2 minutes until desired consistency is achieved.
