Mango Ice Cream – 3-ingredients, healthy, no machine needed!
It is the end of summer and possibly the last chance to enjoy ice creams.
I find it more and more hard to eat store-bought kinds because, as soon as I open them, I cn smell all kinds of chemicals and that is really not attractive.
To avoid that kind of disappointment I started making my own healthy ice creams. This Mango Ice Cream is made with only 3 ingredients: frozen mango chunks, coconut milk and agave syrup. Optionally, some vanilla extract can be added. You can either use an ice cream maker to or stir it with a fork every 30 minutes until it is frozen.
- 1 1/2 cup full-fat coconut milk (400 ml)
- 4 cups mango chunks, frozen
- 1/4 cup agave syrup or honey or maple syrup
- 1 tsp vanilla extract (optional)
Put all ingredients in a food processor and mix until smooth.
Transfer to ice cream machine and follow manufacturer instructions. WITHOUT ICE CREAM MACHINE: Transfer the mixture into container, close and place in your freezer. Stir with a fork every 30 minutes (for about 2-3 hours).
Let defrost for 15 minutes before serving.
