Cornflakes Cookies – the easiest no bake cookies I’ve ever made; just 2 ingredients and super crunchy!
Cornflakes Cookies are the earliest cookies I’ve ever made. My aunt brought this recipe with her from Sweden. She said Swedish call them “Spider Cookies”.
This no bake recipe is so simple that any child can make it. Kids will only need your help with melting chocolate.
The original recipe is made with only 2 ingredients: cornflakes and chocolate. Cornflakes need to be fresh because they will make your cookies extra crunchy. This time I used unsweetened cornflakes while in the past I used regular kind. You can go a step further and add a few more ingredients like ground nuts or dessicated coconut.
For nice presentation, put Cornflakes Cookies in muffin paper cups and sprinkle them with sugar sprinkles.

- 2 cups cornflakes
- 8 ounces (220 g) dark or milk chocolate, melted
- optional*: ground nuts, dessicated coconut, sugar sprinkles

Put the cornflakes into a large bowl. Pour melted chocolate over them and mix with rubber spatula until the cornflakes are evenly coated.

Use a teaspoon (or two teaspoons) to form cookies and place them on a cookie sheet lined with parchment paper. As soon as chocolate cools and hardens, cookies are ready to be served.
*Add about 2 Tbsp of ground nuts or dessicated coconut to the melted chocolate before you pour it over cornflakes.
My mom made these when I was a little kid. But she added peanut butter to rhe mixture. Dropped on wax paper and then refrigerated them. I hope this tastes as good as my memory of childhood candy.
