I promised you last time that I would post a recipe for Homemade Graham Crackers. You’ll be surprised how easy they are to make. Practically, you just mix all ingredients together and make cookies. Depending on your oven and the thickness of your dough, you may need to prolong the baking time a little bit.
Some readers asked me: What are graham crackers? Graham Crackers are similar to digestive biscuits since they are both made with graham flour (whole wheat flour). The difference is that graham crackers are flavored with cinnamon and honey. They are ideal for making pie crust, s’mores, moon pies and all kinds of layered desserts, like Eclair Cake .
You can make this recipe vegan by replacing butter with margarine and dairy milk with non-dairy.

- 1 cup + 2 Tbsp all-purpose flour 150 g
- 1 1/2 cups graham flour 200 g, whole wheat flour
- 1 cup dark brown sugar loosely packed, 200 g
- 1 tsp baking powder
- 1/4 tsp cinnamon
- a pinch of salt
- 7 Tbsp unsalted butter cut into 1-inch cubes and frozen, 3 1/2 oz; 3/4 stick + 1 Tbsp; 100 g
- 1/3 cup mild-flavored honey 4 oz; 112 g
- 5 Tbsp whole milk 1/3 cup; 75 ml
- 2 tsp vanilla extract

Put both flours in the bowl of your food processor. Add sugar, baking powder, cinnamon and salt. Mix to blend. Add the butter and pulse until the mixture resembles coarse meal.

In another bowl, combine honey with milk and vanilla extract. Whisk until honey is dissolved. Add to the flour mixture and pulse a few times until the dough comes together.

Wrap in cling film and chill in the refrigerator for about 2 hours (or even overnight).

Roll the dough about 1/8 inch thick. Cut 2×3″ (6×8 cm) crackers. Place them on a parchment-lined baking tray. Prick the dough with a fork.

Bake in preheated 350 F (175 C) oven for about 10 minutes or until slightly browned.

Could I use light spelt and whole wheat? (I want to avoid using all-purpose)
