Chilled watermelon always brings nice childhood memories of time spent by the sea. Hot weather, beach, sea urchins, star fish, pine trees, crickets… without a care in the world.
Watermelon was always treated as a dessert, sort of a prize children would get at the end of a meal. And that happened only if they ate everything else that was served for lunch. It was a torture to have to eat soups, vegetable stews and meat when you know there is juicy watermelon waiting in the fridge.
Too pity that I didn’t know at that time that it is possible to make a healthy drink out of it, like Watermelon Lemonade or Watermelon Smoothie.
Watermelon Smoothie is a great tasting simple breakfast or afternoon drink, full of tropical flavor of pineapple, coconut and a hint of vanilla. It is equally suitable for vegetarians, vegans, fruitarians and raw foodists.

- 2 cups watermelon chunks seeded
- 1/2 cup pineapple chunks frozen
- 1/2 cup coconut milk
- 1/2 tsp vanilla extract optional

Put all ingredients in a blender and blend until smooth. (Immersion blender will also do a good job.)

Serve immediately.
