Recipe For Cream Fritters

- 1 cup cream
- 5 eggs - the whites only
- 2 cups full flour
- 1 tsp baking powder
- a pinch of nutmeg
- a pinch of salt
Stir the whites into the cream in turn with the flour.
Put in baking powder, nutmeg and salt, beat all up hard for two minutes. The batter should be rather thick.
Fry in plenty of hot sweet lard, a spoonful of batter for each fritter. Drain and serve upon a hot, clean napkin. (SWEET FRITTERS: dust with sugar and cinnamon)
Eat Cream Fritters with jelly sauce. Pull, not cut them open.
found your recipe while searching for fritters and it appears your ingredient list is a little mixed up… baking powder is list 2x and not clear on the amount of salt and nutmeg. what is “prepared” flour, all purpose?!?
